Low Sodium Diet Progressing

It’s been a week now that I have been on this new low-sodium diet. It’s taking some getting used to, but I have discovered a couple of really good recipes. Just this morning, I bought my first bread machine.

Bread without salt is difficult because salt acts as a leavening agent. The cookbook I bought has dozens of low sodium bread machine recipes, important because the machine will mix ingredients more consistently than you can do by hand. Right now I have it cycling to burn off oils used in manufacturing. Will probably make some bread later today or tomorrow.

One interesting side-effect of the low sodium diet is that I have been doing a lot more of the cooking. The kids actually like the food, which for at least one of them is rather surprising.
